Raising little green babies


I'm starting a garden.

It's not time to plant them outside yet, but it will be soon. I don't have much of a green thumb, and the only saving grace I have is what I've learned from my dad.

These plants are like my babies. I'm afraid I'll neglect them, and I'm afraid I'll give them too much attention. My mom over-watered some of them and I nearly attacked her for it. Hah. She doesn't touch them anymore.

I haven't been baking much, so I decided to whip up some cookies two days ago. They were gone by the next day. If that doesn't tell you anything, I don't know what will.

I used to love peanut butter cookies when I was a kid. They were probably my favourite type of cookie. I was—and still am—a peanut butter fanatic. Actually, I like almond butter better, but don't tell peanut butter I said that.


Yeah. I did this. And then I washed it down with a bunch of tea. Trust me, it is a very good idea.


Peanut Butter Cookies
Adapted from this recipe at myvegancookbook.com.

1/2 cup whole spelt flour
1/4 cup flax meal
1/2 cup coarsely ground rolled oats
1/2 cup brown sugar
1 tsp baking powder
1/2 tsp baking powder
Generous pinch salt
1 tsp pure vanilla extract
1 tbsp peanut oil
1 tbsp applesauce
1/4 cup maple syrup
1/4 cup organic peanut butter (I used crunchy)

Preheat oven to 325 degrees. Line a baking sheet with parchment paper; set aside.

Combine all ingredients in a bowl and mix well. Drop tablespoon-fuls of the dough onto prepared sheets, about 1/2-in. apart (they will spread). Dip a fork in some water or sugar and press down on each mound to flatten.

Bake 10-12 minutes (10 for chewy; 12 for crispy). Allow cookies to cool for 10 minutes on the sheet before removing.


Yield: 18 cookies

  1. WOO! I love my veggie garden! I can remember when I first started mine with little pots like this too. I kept them in my kitchen and sang to them every morning while I watered them (still do, actually, except they are outside now). I wouldn't let anyone else water them.

    What are you growing?

    Also, I tried peanut butter for the first time not that long ago - maybe last year. I like it, but I'm not a huge fan. Almond butter is way better. Those cookies sound so good too!
    I always wash my cookies down with tea. Ginger and Jasmine green tea are my favourites :) (though, I will always have a think for Yorkshire Gold English tea).

  2. Oh, your plants must feel so loved. I don't sing to mine. I should, though. As long as I don't break and glass, heheh.

    I'm growing a bunch of herbs, also broccoli, green onions, peas, green beans, onions, carrots, tomatoes... uh I think there are more but I can't remember. Oops. Bonus: they're all organic! :D

    Agreed, almond butter is so dandy. Mmm, ginger green tea is the best. I've never had Jasmine green tea I should try that, too!

    1. Hahah! Well, I'm no singer either, but I swear - it helps them grow! It really does. I'm not crazy. Not. :D

      That's awesome, you're growing a lot! And organic! WOO!
      I have a huge bush of parsely (no idea how I have it, I don't remember planting it), a blueberry bush, broccoli, peas, squash, carrots, onions, kale, cinnamon basil, chives, beets, (dying) cauliflower and strawberries. It's so rewarding to be able to grow your own food. Last year I started a compost bin though, and a few field rats found it - which led them to finding all of my veg. Most of my crop was ruined last year :(

      Definitely try jasmine green tea, it's so good! I get mine from a friend who orders it special from California. It's theee best.

      WOO! is right! Oh my gosh I am so jealous. I wish I was growing fruits too. A blueberry bush... sounds like heaven, to be honest. Sorry to hear about last years trouble D: Better luck for this year! For us both, haha. I'm such a novice.

      Oooh that sounds nice. I need to go tea shopping soon, anyway. I don't have much left. Always running out of tea so quickly, this is a big problem for me, haha.

  3. Peanut butter on peanut butter? Yes, sounds like my kind of snack.

    I've been wanting to grow a veggie garden for so long! Once I get home and have the space though, I think it may be too late in the season. Yours looks so adorable :) It is like having babies!

  4. I cannot look at all those plants without wishing I had a garden or at least a balcony. Growing stuff on my windowsill is just not the same.
